Savory and Sweet Salad
This is Nicole's recipe and is a favorite of mine for a nice side salad!
Ingredients:
Spring Mix Salad Greens (or substitute any leafy salad green)
1 cup dried golden raisins
1 cup walnuts
1 cup Gorgonzola cheese
Trader Joe's Goddess Dressing
Salt and Pepper
Prep:
Combine all the ingredients in a big salad bowl and lightly add dressing. Add salt and pepper to taste and serve!
Note: Normally, I hate walnuts, but they're amazing in the recipe.
Excellent Eats Has Launched!
If I had a nickel for the number of times Nicole has called home asking for recipes since we've moved to Boulder, CO, I would be a rich man. Having known Nicole since high school, I would say that cooking good meals may be the number one priority in her life, just above kissing her black lab, Jadie, on the mouth (ew) and Lord of the Rings. And, having tasted the recipes for which she calls home desperately, I can see why.
I've called home more times than I can remember asking my mom, my dad, or Connie for an ingredient reminder because food is the most important things in my life (up there with the Caps and fishing).
Meals are more than food on a plate, but a time to connect, relax, and enjoy good company. Since we can't always be together, Excellent Eats has been created as a way to share the recipes and secrets (if you dare to reveal them) that make the special dishes that we all love. Feel free to include as much, or as little as you would like, such as a funny story or a picture of your best culinary creation - whatever you like! So, have fun, stay hungry, and above all, get ready for excellent eats.
